I have tried Many supposedly non-stick pans over the years. This is the first time that I could actually say that one worked. My husband was even able to wipe out over-spilled cheese from a grilled cheese sandwich. He was impressed, and that takes some doing. I liked this pan so well that I ordered the whole set.

I wouldn't call this a non-stick. More like "easy-clean" after soaking in water. Omelets stick pretty badly, pancakes need some extra oil, and crepes are too much trouble. It was really nice for the first few uses, but they all are for a couple of weeks. A different $7 regular non-stick pan that's a year old still does much better than this pan. I have an electric stove and it can be pretty tough on pans even if you're careful. Maybe on a gas burner it would have done better.
But here's why the 3 stars, and why I still use this pan: I've never seen it smoke and I've never detected any kind of teflon smell. After the first few weeks when it was clear that this wasn't going to be the pan I'll use for eggs, cheese, or pancakes, I started using it as a griddle for frying meats or stir-frying vegetables with almost no oil. The meat juices or sauces sometimes stick to the pan, but as I mentioned, they come off easily after soaking in water. A stainless, enamel, or aluminum wouldn't do that without some scrubbing. And it never smokes, which always made me nervous with the regular teflon.

This pan really disappointed me.I had bought it at Macy's, I was sold on the 'green gourmet' tag and it looked great, very sturdy. It still looks great after four months of use.First of all , I have been extremely careful with the pan and made sure it was never on a very large flame and monitored it to the point where my husband now thinks I'm a crazy person.I was so worried about the instructions and post purchase had come online to check the amazon reviews. I figured the ones with the poor reviews were people who didnt care for the pan. I made sure I really cared for it. More than any pan deserves.
It does work but not very well. I had bought it to make omlettes, firstly you MUST put oil and once your omlettes are done you need to run your spatula under the omlette before you attempt to flip it or slide it out. There is always some kind of sticking which takes place in the centre. I was not expecting this after using traditional teflon pans.
After using it, like all the other reviews mentioned, there is some kind of oily sticky slime that remains at the bottom of the pan, which means that you need to wash it between immediate uses otherwise it becomes like a regular pan that sticks.
I tried cooking crispy crepes and it doesn't work. For me this is a one purpose pan for omlettes.
